Pastis 51 (100cl, 45%)

A summer staple, Pastis 51 is a classic tipple from Pernod, first released in 1951, inspired by the refreshing flavours of the Mediterranean. Serve well diluted in chilled water for a gorgeous drink to enjoy in the garden on a sunny afternoon.

• Flavor Profile: Pastis 51 has a distinct, fresh aroma of star anise, complemented by notes of licorice and various Provençal aromatic herbs like marjoram, mint, rosemary, and thyme. It is known for a slightly lighter, more delicate style compared to its main competitor, Ricard.
• Ingredients: Its production involves the maceration of Chinese or Vietnamese star anise, fennel, Oriental licorice, cola nuts, and other local herbs in neutral alcohol.
• Alcohol Content: It typically has an alcohol content of 45% by volume.
• Appearance: The spirit is an intense golden or amber-yellow color when neat. When mixed with water, it takes on a characteristic cloudy, milky-white or opalescent appearance, a phenomenon known as the “louche effect” caused by the hydrophobic anethole oils coming out of solution. 

1. Pour the Pastis: Add one part Pastis 51 to a tall glass.
2. Add Cold Water: Pour in about five parts cold water (the ratio can be adjusted to personal preference). This causes the drink to turn cloudy.
3. Add Ice (Optional): Ice cubes can be added after the water to enhance its freshness, but should not be added first, as this can cause the anethole to crystallize.
4. Serve: Give it a quick stir and serve.
