Noilly Prat Original Dry Vermouth (100cl , 18%)

Noilly Prat is a renowned brand of French fortified, aromatized wine (vermouth), famous for pioneering the dry vermouth style. It is made in Marseillan, in the south of France, and its unique production process involves outdoor aging of the base wine, which imparts a distinctive and complex flavor profile.
Key Characteristics
  • Type: Vermouth (fortified and aromatized wine).
  • Origin: Marseillan, France, by the Mediterranean Sea.
  • Base Wine: Primarily made from Picpoul and Clairette white grape varieties, which are local to the Languedoc region.
  • Aging Process: A unique aspect is the outdoor aging (called L’Enclos), where a selection of wines rests in oak casks exposed to the natural elements (sun, wind, sea air) for a year, leading to oxidation and a unique nutty, saline character.
  • Botanicals: The aged wines are infused with a secret blend of herbs and spices sourced globally. Common ingredients in the Original Dry include Roman chamomile, coriander from Morocco, bitter oranges from Tunisia, and elderflower.
  • Flavor Profile: The Original Dry is known for being dry, herbaceous, and complex, with notes of citrus, chamomile, pine, and a slightly salty finish.
  • Alcohol Content: Typically around 18% alcohol by volume (ABV) for the dry versions.
Varieties
While best known for its dry vermouth, Noilly Prat also produces other varieties:
  • Original Dry: The iconic, pale straw-colored expression, essential for classic cocktails like the Dry Martini.
  • Rouge (Sweet): A red vermouth with a semi-sweet, spiced profile, featuring notes of cloves and cocoa beans.
  • Ambré: An amber-colored version with intense spice and floral notes, including rosebuds and cardamom.
  • Extra Dry (US Market): Previously a specific US version, now the global original dry recipe is used worldwide.
Usage
Noilly Prat is a versatile drink, enjoyed in several ways:
  • As an Aperitif: Best served chilled, over ice with a twist of lemon peel.
  • In Cocktails: A staple ingredient in classic cocktails like the Martini, where it provides depth and balance to gin or vodka. Julia Child notably favored a “reverse martini” with five parts Noilly Prat to one part gin.
  • In Cooking: Widely used by chefs to enhance sauces, especially those for fish and seafood dishes, as its complex profile works well in reductions.
