Pagès Verveine du Velay Jaune (Yellow) is a premium, sweet, and aromatic French herbal liqueur produced in Le Puy-en-Velay since 1859. Crafted from lemon verbena and over 30 botanicals, it is aged in oak barrels and sweetened with honey to create an elegant, citrus-forward alternative to Yellow Chartreuse.
🌿 Flavor & Aroma Profile
- Nose: Bright notes of lemon verbena, spearmint, honey, pine needles, and subtle floral spices.
- Palate: Minty and pine-fresh with a candied lemon sweetness, balanced by a gentle, complex herbal backbone. It is less viscous and spicy than Yellow Chartreuse.
- Finish: Crisp, lingering spearmint, and mild aniseed.
- ABV: 40%
⏳ Production Process
The liqueur is made using a meticulous, 18-month process:
- Botanicals: The distillery grows and hand-harvests lemon verbena locally. The leaves are blended with mace, coriander, star anise, and other botanicals.
- Distillation: The botanicals undergo maceration and are distilled in traditional copper alembics.
- Aging: The distillate is aged in French oak casks (some previously used for Cognac) for over 12 months, then finished with local Auvergne honey.
🍸 How to Serve
- Digestif: Serve it chilled (straight from the fridge) or on the rocks after a meal.
- Cocktails: It acts as a fantastic, sweeter substitute for Yellow Chartreuse in modern cocktails. It blends beautifully with aged spirits (like rye or cognac) and pairs well with tonic water or Champagne.
- Culinary: It is a classic ingredient for flavoring whipped creams, baked goods, and ice creams.
