Salers Gentian is a classic French apéritif made from the wild yellow gentian root (Gentiana lutea) that grows in the volcanic Massif Central region. Established in 1885, it is the oldest producer in the category. It features a rustic, earthy flavor profile with an elegant, bitter finish.

  • Ingredients: Unlike its famous rivals (like Suze), Salers does not add artificial yellow coloring, yielding a natural straw color and less sugar. 
  • Process: The wild roots are harvested using a specialized “devil’s fork” before macerating in alcohol. The mixture is distilled, blended with botanicals, and aged for over two years in Limousin oak barrels. 
  • Alcohol by Volume (ABV): Typically bottled around 16% ABV. 
How to Drink It
  • The Traditional Way: Served neat or over ice with a squeeze of fresh lemon, or topped with sparkling water/club soda.
  • In Cocktails: It is a vital component in modern classics like the White Negroni (equal parts Gin, Salers, and a dry/blanc vermouth).
