The process of creating this bespoke gin began with Copperhead, who contributed its classic distillate made from five botanicals: juniper, coriander seed, cardamom, angelica and orange peel. With this forming the base, Beke then added 13 of his own botanicals, most of which were spices, including allspice, bay leaf, cassia, dill seeds, fennel, ginger, mace and pepper. Eight-year-old jenever was then added as a sweetener, as Beke wanted to avoid Old Tom territory by using sugar.
- Aroma: Sweet spices like nutmeg and cinnamon are prominent, mixed with a hint of orange blossom, angelica, and juniper.
- Taste: It has a dry, spicy, and savory character with strong notes of fennel, dill, and bay leaf, softened by a creamy texture.
- Finish: Long, savory, and spiced, with piney juniper coming through.
- Gibson Martini: Stir 60cl of the gin with 10cl of dry vermouth with ice and strain into a martini glass, garnished with a pickled onion.
