San Cosme is an un-aged mezcal made with 100% agave Espadin. It was originally exclusively produced for the German market, but proving so popular it can now be found throughout Europe. Won a Silver medal at the International Wine & Spirits Competition 2024.
The piñas are baked in large rock ovens. Once cooked, piñas are mashed using traditional stone mill wheels. The mashed fibres are placed in large wooden vats to ferment for two days. It is distilled twice, always maintaining an abv of 40%.
